Do not reduce “Indian catering” to one menu label. The RFP should state:

• vegetarian, vegan, Jain and allergy counts by function;
• onion, garlic, egg and cross-contamination rules;
• buffet, plated, live-station and staff-meal requirements;
• tasting process and final menu sign-off date;
• outside chef, specialist ingredient and kitchen-access needs;
• pandit or officiant responsibility and travel requirements;
• mandap, sacred-fire, baraat and sound requirements.

Arrival and guest logistics
